Nimbu rice or lemon rice is so delicate, delicious, and it is vegan! Much like the coconut rice, this dish can come together so quickly using your day-old basmati rice and pantry staples.

Whenever I’ve asked what recipes you guys would like to see, there are always a few of you asking how I make my Basmati rice. It is really very simple, but if you want to have elegant long grains that don’t stick together you must wash your rice well before it goes into the pot.

For all of you who were wondering where to get coconut for the coconut rice I shared with you the other day. If you're not shredding your own coconut (it's fun I promise!!), frozen shredded coconut is preferable to dry. And make sure it is unsweetened!

Tadka in Hindi, or poorichukotal in Tamil, is used to impart flavor to all sorts of dishes in Indian cuisine. It also wakes up the flavors of the spices and aromatics you’re using by frying them in oil or ghee separately first before adding them into your dish.
